Cooking with Beer Passionate Risotto

I haven’t cooked with beer in a while which is why all of my built up creativity exploded into this one recipe. Luckily, I didn’t spend my night slaving away in the kitchen for nothing – this meal turned out to be delightful. The Passionfruit Sour Ale by Breakside Brewing imparted a tangy flavor into the grains that integrated beautifully with the apples and goat cheese. The addition of blackberries and green onions took this dish to the next level. If you didn’t pick up on it from the name, this ‘Passionate Risotto’ is anything but boring.

Serving Size: 2-3 plates

Ingredients:

  • ½ + ¾ cup Passionfruit Sour Ale by Breakside Brewing
  • 1 ¾ cup Chicken Broth (a 14.5 oz can)
  • 1 cup Arborio rice
  • 2 tbsp butter
  • ¼ tsp dried thyme
  • 1 tsp powdered ginger
  • 1 granny smith apple, thinly sliced
  • 1 pint blackberries (make sure they are sweet, not tart!)
  • 2 oz goat cheese
  • 2 tbsp green onions, thinly sliced

Directions:

Melt the butter in a large, deep pan.

Add the rice and ½ cup of Passionfruit Sour Ale by Breakside Brewing to the pan.

Turn the heat to high until boiling then reduce to medium-low. In a pot on a separate burner, heat the chicken broth. When the rice has absorbed the ½ cup of beer, add the chicken broth in ¼ cup increments, pouring in a new addition each time the last one has completely soaked in. Throughout the process you should be stirring the risotto and helping all of those delectable flavors get in the grains. After the third broth addition, add the dried thyme and powdered ginger. When all of the chicken broth has been used, the rest of the liquid will be ¾ cup of Passionfruit Sour Ale, added in ¼ cup increments. Once the beer has been added and simmered in, you can take a bite of the risotto to make sure it is cooked to the right consistency.

Scoop some risotto onto a plate and top with apple slices, blackberries, goat cheese crumbles, and some green onions. Serve with Passionfruit Sour Ale for ultimate deliciousness!
