Style: Double IPA Aged in Fresh Oak Barrels
ABV: 8.5%
IBU: 70

Double IPA and wood aged may not be something you hear on a regular basis. You may even cringe a bit. You may say don’t age the hops, drink them fresh. Elevation Beer Company has gone and done just the opposite of that. They have created a wonderful Double IPA and put that liquid into fresh oak barrels while still retaining the wonderful fresh, bright hop characteristics. Background: We elves try to stick to the four main food groups: candy, candy canes, candy corns and beer. Well not exactly the words of Buddy the elf but, he would definitely like Port Brewing’s 2011 Bourbon Barrel Aged Santa’s Little Helper. The barrel aged version has spent an extra 9 months in bourbon barrels and this particular bottle has spent just a little bit over a year in the cellar allowing the flavors to meld into the perfect helper to get you through the holidays. Last week a group of writers and friends got together to taste Stone Brewing’s Punishment. If you have not heard about this hellish creation, Stone’s Punishment is 2013 Double Bastard Ale brewed with freshly harvested peppers and aged in bourbon barrels. In November, I always look forward to when Stone releases their Double Bastard Ale. This has been one I always seek out. This year they have taken it to the next level. Stone has released three different versions that have been barrel aged. First, and tamest of the trio, Southern Charred which is their Double Bastard aged in various Bourbon Barrels. The next two really take the heat up. Bringing the fire, Stone’s Crime and Punishment are aged on an insane amount of peppers. This has created one crazy set-your-mouth-on-fire experience. As late August and early September hit, I begin to dream about Wet/Fresh Hop ales. Over 2 years ago I decided that I would take this passion for wet/fresh hop ales into my own hands. I planted my own hops and in turn would brew my own wet/fresh hop ale. The first year the hops grew rapidly and produced a good amount of Chinook, Cascade, and a small amount of Nugget. My girlfriend Lynn and I brewed a fresh hopped pale ale that was a hit at our Halloween party. The second year did not fare so well for our hops as they were attacked by some killer aphids. Passing Afternoon – 100% Brett Mosaic Pale Ale

Since I started homebrewing I have been looking for ways to push flavors and try new things with brewing. Lately, I have been really intrigued by the use of brettanomyces as the primary fermenting yeast strain in beer. I have done a few experimental small 1 gallon 100% brett batches and I have been happy but I really wanted to take it to the next level. As soon as my local home brew store, High County Hombrew, got some fresh Mosaic hops I knew it was time. I felt that the mango, lemon, citrus, earthy pine, tropical fruit, herbal and stone fruit notes that the Mosaic hops produced were made to go with a fruitiness of some strains of brettanomyces. Hombrewing – Green Bullet Saison Part 2

As the weather has gotten warmer I have been craving a light tart saison. Currently I have brewed three of them that are aging away. Recently, I bottled one that was exclusively hopped with Green Bullet hops. I wanted to sit down and post a tasting of this beer.

This beer was brewed back in early January. Here you can see my recipe and brew day notes. The beer is a straightforward take on saison with a base of pilsner malt and some Vienna and wheat to add a bit of complexity. I chose the Green Bullet hops as they are a dual purpose hop that provide ample bittering and aroma. This beer was the first beer that I have gotten a chance to use my new floor corker. Overall I was impressed with the look and the feel of the caged and corked bottles. I do think I added a little too much sugar at bottling as the bottle gushed a bit as I opened it.
