For this week’s installment of Collaborating for a Cause, we head to one of the Mountain states for the first time in this series. Cerebral Brewing, based out of Denver, Colorado, was quick to show their support for Alex Kidd, the person behind Don’t Drink Beer, and his family following his devastating cancer diagnosis. For Cerebral’s fundraiser, they re-released two high-gravity beers, donating 100% of proceeds from all bottles and draft pour sales to the Kidd family GoFundMe.

Vanilla is a very familiar flavor for most of us. It’s so ubiquitous, in fact, that the word is used as a pejorative for anything that is commonplace and mundane. But that’s not being fair to this fascinating tropical spice, which can display a wide range of expressive aromas and flavors, and can be used in unique ways throughout world cuisine. In North America and Europe, it’s mostly associated with desserts, pastries, and other sweet treats, to the point that vanilla is often taken to be sweet on its own. That assumption is turned upside down in many other global food traditions however, in which vanilla can be used in savory or spicy dishes. Its heady but gentle profile allows it to work in support of a variety of other flavors.

And it’s of interest to this podcast because vanilla is used so extensively in craft chocolate and, often, in craft beer as well.

Top Finds from Snallygaster 2023

We went. We drank. We got very wet. Snallygaster 2023 is in the soggy books and lived up to its hype as a massive beer festival serving some of the best breweries and their rarest beers. While the picturesque view in front of the US Capitol building was marred by persistent rain throughout the day, spirits were not overly dampened. Great beer and great conversations with the people making the beer define what Snallygaster is all about.

Cerebral Brewing | Triple Mash Pappy Van Winkle Here Be Monsters

There are certain spirits in the world of barrel aged beer that elicit perked up ears, and then there are those brands that generate whiplash causing sore necks and desperate trips to the chiropractor. Pappy Van Winkle (PVW) falls squarely in the latter category, a mythical wheated bourbon whose popularity and even legend has skyrocketed in the past decade causing bottles to sell on secondary markets for 20-30x their retail prices of $120-$300. Even the used barrels from these 15-23 year aged whiskeys sell for exorbitant prices as breweries clamor to get their hands on them. Cerebral Brewing was lucky enough to land two Pappy Van Winkle 15 Year barrels, and they chose to rest a triple mash version of their Here Be Monsters Imperial Stout in those barrels. This particular single barrel expression aged for 39 months, an incredibly long time yielding an incredible creation.

Cerebral Brewing | Elegant Solution: Foeder Cold IPA

Cold IPAs and clean foeder-aged beers are two styles that have recently grown in popularity. The former offering a cleaner crisper take on American IPAs and the latter imparting a slightly woody and light vanilla characteristic to Lagers, these are exciting takes on well established styles. While no natural overlap between these is apparent, Cerebral Brewing thought otherwise and created a new style, Foeder Cold IPA, an innovation first expressed by Elegant Solution.

Cerebral Brewing | Character Reference Foeder Vienna Lager

It’s a chilly Friday afternoon in Denver, in the Bluebird District 2.5 miles directly east of the State Capitol, and the Cerebral Brewing taproom is buzzing. Not that this is unusual, of course. The four-year-old brewery frequently draws a big crowd to its bright taproom, one side of which uses academic papers as wallpaper. After all, the brewery’s motto is “An Academic Pursuit,” an honorable principle that guides these innovative brewers to offer beers that run the gamut. One of those is Character Reference, a foeder Vienna Lager.
