Mike Hale, the brewery’s founder, opened Hale’s Ales Brewery in 1983 and the brewery has been a staple of Pacific Northwest brewing ever since. In the sea of Ballard’s microbreweries, growlers, and flannel shirts, the large Brewery and Pub that has served as Hale’s Ales home base since 1995 suggests a permanence that promises to outlive last winter’s mustaches, this year’s beards, and whatever new facial fashions are donned by Ballard’s trendy, beer-loving residents in the years to come. Though Ethereal Brewing has been cranking out new recipes consistently throughout its first year in business, the same brew still warms my soul week in and week out.
The Lambda Oatmeal Stout, my tasty favorite, was named the Lambda for a very good reason. The lambda is a measurement of industrial malfunctions, which seemed all too appropriate for the title of this accidental brew success. Due to the level of popularity of stouts, the brewers decided it would make no sense to even attempt the initial recipe. It has now become the most popular beer on the menu, second only to the IPA. Railhouse is veteran-owned (hence the patriotic bottle cap) and -operated in Aberdeen, North Carolina. Aberdeen, like many towns home to NC brewers, is relatively small and out of the way. I miss smoking in bars. My clothes and hair don’t reek every night, and the lack of clouds of noxious oxygen thieves in bars dulling taste and smell might have done more to promote the rise of craft beer than any other external factor – but the romance of the dive bar is largely sustained by the haze that lingers around dim light bulbs. There was a certain je ne sais quoi that many establishments lost once they cleaned up (while others revealed even worse smells that the smoke was hiding). In my eternal hunt to recapture this hazy atmosphere, I stumbled into one of my favorite dive bars in Brooklyn (low lights, great bartender, amazing jukebox, check-check-check), and discovered Evil Twin’s Ashtray Heart. With one sip, I found the gritty but smooth feeling I was missing, with none of smoking’s greatly-enhanced chance of lung cancer.

Before Kentucky is scheduled to be buried under a foot of snow this week, I watched perplexed as Lexatonians prepare for Snowmageddon by stocking up on a month’s worth of Digiornos and Doritos while congesting every aisle of the grocery store. Rather than loading my cart with six gallons of milk and the last of the bread that just might last me 48 hours, I look for a comforting beverage with a flavor that resonates with the coziness of this bitter season. My eyes fell upon the words “Sweet Potato Cream Stout” and I knew I could ride out any storm with this belly-warming brew.

This Friday we will celebrate one of the worst holidays, Valentine’s Day. If you’re in a relationship, it is almost impossible to make any kind of unique romantic plans that 100 other couples won’t be doing. If you’re single, it’s a 2 week build up engineered to make you feel like a loser. The one positive is that no one judges you for buying ridiculously expensive chocolates. This year I decided to try to find the beer equivalent of romantic, fancy chocolate. With the cartoon Rihanna-circa-Umbrella on its label, Founders’ Big Lushious was the clear choice.
