Bill Eye and Ashleigh Carter, formerly of Prost Brewing and Dry Dock Brewing before that have found their true passion project and they aren’t sparing any expense. With a 30 some barrel brewhouse shipped over from Germany, a rich brewing tradition between the Eye and Carter at the helm, and a dedication to authentic German-style lagers, their beers are match up against the best you’ll find across the globe.

We caught up with Bill and Ashleigh a little over a month and a half after opening to discuss their storied brewing past, how innovative their traditional style beers are in a sea of sours, IPAs and barrel-aged boundary pushing extremities, as well as this weekend’s RiNo Oktoberfest taking place on their front porch, right outside Rackhouse Pub / CSquared Ciders / Bierstadt Lagerhaus, Saturday, September 24.
