Celis Brewery | Celis White

July is one of the hottest months in Texas, but back on July 11 people from all over Austin flocked to get in line for the grand reopening of an Austin legend, Celis Brewery. Anticipation had been building for months when founder Christine Celis, daughter of world renowned Belgian Brewmaster, Pierre Celis, announced the return of Austin’s first craft brewery a little over a year ago.

A particular part of her announcement generated the most excitement; Christine would begin brewing her father’s original recipes including the legendary Celis White. The beloved Belgian-style wit beer was first brewed by Pierre Celis back in 1965 in his home town of Hoegaarden where he was credited for reviving the Belgian witbier.

In 1992, Pierre brought his signature witbier recipe and his proprietary yeast strain to Austin, Texas and locals were instantly hooked. Celis White is arguably one of the most influential craft beers to come out of Austin. The much beloved brew inspired many of the brewery founders in Austin today, Brad Farbstein of Real Ale Brewing Company reminisces about his frequent trips to the brewery, “I went so often that at some point they finally told me that I couldn’t come back unless I brought someone with me.”

To this day, it is brewed with the proprietary yeast strain from Belgium along with Cascade, Saaz & Willamette hops. The signature witbier sparkles with a golden color and a chalk white head that leaves a gorgeous lace behind with each sip. And as of this week, you can pick up a six pack of Celis White at your local craft beer retailer.
