Poised along Florida’s renowned 30A scenic highway of pristine white sand beaches, Idyll Hounds Brewing Company has carved out a name for itself in Panhandle beer culture. What started in 2014 as a humble dream between high school friends Chas Swanson and Frasier Hansen has since grown into a respected and award-winning operation known for hop-forward beers, boundary-pushing experimentation, and unwavering dedication to brewing what they enjoy drinking themselves.
Born of Friendship and Outlandish Ideas
Moving from summit to sea is no small feat, much less for opening a brewery. Co-founder Hansen grew up frequenting and vacationing along the 30A stretch. After finding himself returning again and again, he knew that one day he would put down roots and pursue his dream of opening a brewery here. So when Hansen connected with his longtime friend, Swanson, they decided to create something together from the ground up.
Swanson and Hansen realized early on they needed a name for their venture. They landed on a two-part solution: “Idyll Hounds.” The first word is associated with enjoyment: telling stories, enjoying community and exceptional beer. Beer and breweries have historically created space for idyllic and savorable moments. And the second word honors Hansen’s father, “The Hound,” who helped them kickstart their business. At the brewery, there’s a vintage photograph of The Hound riding a bucking bronco, which reveals part of his essence at a single glance.

Opening their doors 11 years ago, Hansen and Swanson set out with a clear mantra in mind: “brew with intention, and brew what we love.” Their philosophy is alive and well in everything Idyll Hounds does. From their two-barrel batches of experimental beers to the carefully curated 20-plus taps at their Santa Rosa Beach taproom, the brewery maintains a deep commitment to flavor, quality and creative expression.
Head brewer Swanson and co-founder Hansen work in tandem on both recipe ideas and execution, bringing a hands-on and detail-oriented approach to their beer production that permeates every batch.
Divide and Conquer: The Start of Something Big
Their first beer, Divide and Conquer double IPA, still stands tall as their flagship offering—a nod to their roots and a reliable introduction to what Idyll Hounds is all about: bold hops, balanced profiles and an openness to evolve. Opening a brewery with a double IPA is no subtle move, but totally fits the culture of Idyll. Now, their lineup spans from pale ales, such as their recent U.S. Open Beer Championship gold winning Palapa pale ale, to saisons and experimental hop teas and fruit-laced sours.

Want a soft, crushable pilsner? Try Ghost Crab. Craving a juice-filled hazy IPA? Look no further than Boosh. And if saisons with herbal complexity are your jam, the rosemary-infused is a taproom standout.
Culture & Events
Every September, the team celebrates its roots with Houndfest—a blowout anniversary event featuring up to 40 beers, including special barrel-aged releases. It’s a culmination of the brewery’s approach: an appreciation for craft, a nod to the past and a fearless look forward.
Despite their growth (distributing 1,800 barrels a year with in-house packaging and Panhandle-wide distribution), Idyll Hounds still feels like a passion project run by friends. Its tight-knit team enables careful attention to detail, from ingredient sourcing to the final pour. They’re not afraid to go the extra mile—adding more hops, fruit, or time to get it just right, even for a one-off brew.
Hansen notes that they work diligently to “stay ahead of the trends” and often deliberate “how do we take things further?”
The team’s commitment to continue to evolve and stay true to themselves breaks through when you sip through the variety of their beer list.
Staying Ahead by Staying True
Continuing its vision, the team recently opened its first restaurant, Idyll Hound Proper, a locally focused restaurant, also along the 30Avenue business district. With a carefully curated menu of wings, local seafood and other pub-style fare, it continues to expand the brewery’s footprint. The Idyll team isn’t worried about chasing the next big thing—they’re leaning into “the freedom to build what we wanted” one location at a time with great personal touch and intentionality.
