Chicagoland doesnโ€™t have many breweries spending a lot of their attention on saisons, especially barrel-aged. There is a small gem however in the Western Suburbs called @afterthoughtbrewing that Iโ€™m hesitant to even tell you about because I want it all for myself. This is Saison Meer, which is fermented in oak, with rhubarb added. It has all the elements and structure of all my all time favorite saisons with a bright lemon zest up front, complimentary barrel character and modest funk, medium body, and a delicate touch of fruit at the end. Really impressed with my second time trying Afterthought, proving the first was no fluke.
