Modern Brewery & StilL 630 Collaborate on New Beer

Local distiller StilL 630 is once again partnering with good folks at the Modern Brewery.

The two have collaborated in the past with Modern Brewery using StilL 630’s RallyPoint barrels to produce a barrel-aged version of their chocolate coffee stout: Arkham’s Finest.

This year’s partnership will yield two new products, each to be debuted at StilL 630’s annual “630 Day” party coming upJune 30th.  Last year StilL 630 used beer from Modern Brewery and distilled it into whiskey, and has been aging in new barrels for 8 months.  This new spirit will become “StilL Modern Whiskey.”  At the same time, Modern Brewery took more of that same beer and have been barrel aging it in barrels used to create StilL 630’s Rallypoint whiskey. This new beer will be called “Cambre de Garde.”

Their first collaboration resulted in a barrel-aged version of Modern’s Arkham’s Finest last November.

“Now the barrels will go on to age some badass beers at Modern,” said distiller David Weglarz on Instagram.

That ‘badass’ new beer will be called Cambre DeGarde and we’ll get our first taste at the distillery’s annual “630 Day,” coming up June 30th.

“We decided to go with a summer appropriate beer, to wit, a Biere de Garde – which is basically a strong pale ale,” said Weglarz. “This one has some incredible floral notes and the right amount of body to be delicious now, but traditionally these beers are meant to be cellared before drinking.”

As they did with their first collaboration, this brew will also be double distilled and aged in new 15 gallon charred oak barrels to impart the oak flavor and develop some more complexity as a spirit in the time they have available. Modern is also aging a couple hundred gallons of the beer in StilL 630’s RallyPoint barrels in the classical style of maturing a Biere de Garde before consumption and will be released at the same time as the Cambre DeGarde to enjoy the two different expressions of this delicious alcohol.
