March 25, 2025 | Britt AntleyThe Festival of Wood and Barrel-Aged Beer is a legendary beer festival and competition held annually in Chicago. Each year breweries from across the U.S. enter their barrel-aged creations for judging, hoping to earn a coveted medal in one of 13 categories. As expected from a competition highlighting barrel-aged beer, most entries are high ABV bruisers where a couple sips is all the flavor and alcohol a drinker could reasonably handle.
Milieu Fermentation Company of Aurora, Colorado, bucked the trend by entering smol., a 2.7% ABV barrel-aged mixed culture ale made in collaboration with Baere Brewing Company in neighboring Denver. For their effort, they were handsomely rewarded with a gold medal in the Wild Beer Mixed Culture (Acidic) category, a huge honor for a tiny beer.

June 4, 2018 | Mathew PowersSomehow, suburban Chicago’s Scorched Earth Brewing barreling program remains off the radar for most beer drinkers, which leaves this writer befuddled. Certainly those in the Chicago region with a nose for barrel-aged beers should make it a high priority to seek all forms of Scorched Earth brewing alchemy. One of the brewery’s latest releases, Barrel 76, is a Flanders red ale aged in French oak wine barrels with Montmorency cherries and Madagascar vanilla beans. Traditional, yet innovative. Sophisticated, yet rustic. Tart, yet a bit sweet. The beer serves as an example for what craft brewing is all about.
Half Acre Beer is Experimenting with Mixed Fermentation

Half Acre Beer Co. is expanding and it’s a good sign for Chicago craft beer drinkers. Their new Balmoral Brewery space, a massive 60,000 square foot expansion, is getting closer and closer to opening to the public. Not only does this mean more real estate, but it also means more opportunities to brew beer, including the newly announced mixed fermentation program at their original brew spot in Lincoln Square.
