As new developments arise and things are changing as it seems almost by the hour during the COVID-19 pandemic, it may be tough to keep up with which breweries are still open; in what format they are open in, if they have certain limitations (depending on the state that you’re in), and so on. The underlying factor remains the same: everyone is affected in one way or another by the growing pandemic, but we all love the craft beer community and want to find ways to continue to support one another.
Lexington, Kentucky’s West Sixth Brewing (named brilliantly for the street corner on which it resides) started as a humble little brewery back in 2012 when Kentucky was barely a blip on the craft brewing radar. At the time, Kentucky had only 14 breweries and ranked near the bottom of the Brewer’s Association 2012 list of US breweries per capita at 43.
Craft brewing in Kentucky has exploded since then, with West Sixth being particularly successful, albeit through an unconventional definition of success. Their focus on community, sustainability, ethics and keeping things local has served them well. To learn more about why this model has worked for them and to get their thoughts on the future of the industry as a whole, we posed five (okay, six) questions to West Sixth’s Creative Director, Kelly Hieronymus, and co-founder Ben Self.
Brian Sheehy and Doug Dalton own three Cask Store locations: the flagship downtown on 3rd and Market, and another spot in the old Rincon Postal Building near the Embarcadero, and Cask on College in Rockridge. Sheehy and Dalton own a handful of other great bars in the Bay Area, including Bourbon and Branch, Pagan Idol and Local Edition. They have been influential to the cocktail scene in this area for the past decade and many great bartenders who have gone on to open their own establishments came up through the ranks of this company. Cask Taproom and Wine Bar is the name of the new drinking establishment within the Cask on College Shop. I spoke with taproom manager and beer buyer Josha Baker about the history of Cask, herself, and the Grand Opening on March 23, 2018.
