The building has a long history of housing creative scientific endeavors, including being the birthplace of the world’s first handheld electric drill, post-WWI. Hinterland Brewery | Saving Gracie Gluten-Free Hazy IPA

Hinterland: (noun) a word of German origin meaning “the land behind”; an unexplored, uncharted area full of possibility, opportunity and adventure.

Founded in 1995, Hinterland is Green Bay, Wisconsin’s first modern-day brewery to emerge from the late 1980s craft beer boom. Founders Bill and Michelle Tressler, who were both just 24 years old at the time, moved back home from a rock band drumming, magazine editing, corporate career adventure in California to open a brewery of their own. They rented an old cheese factory outside of town and bootstrapped their way through startup, nearly burning down the factory in the process. Eventually, the Tresslers and their head brewer Joe Karls moved operations into a turn-of-the-century meat processing plant in downtown Green Bay. The small, charming space worked well enough for Hinterland until 2017 when they got a once-in-a-lifetime opportunity to expand. They sold the building and brewhouse to Copper State Brewing Company.

First Look | Ratio Beerworks Opens Overland Location

It’s been nearly a year since it was first announced that Ratio Beerworks had acquired the space formerly occupied by Declaration Brewing. And while a lot of growth has taken place both within that space and with Ratio, three core values still remain unchanged: Beer. Music, Party.

While its previous tenant never seemed to coalesce around a consistent theme, consistency might be the best way to describe Ratio’s second taproom and production facility. It’s still the same great beer the city of Denver has grown to love featuring several fan favorite seasonals such as King of Carrot Flowers, their iconic carrot and elderflower Saison, Major Nights Lime Gose, as well as beloved flagships such as Domestica American Standard Ale, Dear You French Saison, and Hold Steady Scotch Ale, while also featuring a few new entries such as Smoked Helles, a Smoked Lager made with Laws Whiskey and Colorado Malting Company and Sneak Peek, a Hazy IPA produced exclusively for the Ratio’s Overland location.

Cultivate by Forbidden Root is Now Open

Cultivate by Forbidden Root is now open in Lincoln Square. This is the brewery’s second Chicago location, which takes over the space previously occupied by Band of Bohemia. The Forbidden Root team has brightened and opened up the space, introduced an updated menu and are encouraging people to get out of their comfort zones with their beer list, in the best possible way. Their menu features elevated brewery food, including a Porchetta French Dip Sandwich that melts in your mouth after the perfect au jus dunk. The beer menu is extensive and unique, mirroring Forbidden Root’s West Town location. Foeder-aged and kviek style beers set this location’s beer menu apart. The team plans to continue to experiment with all the funk, especially with the attached taproom opening soon.

Anchorage Brewing Adds Innovative Wood Coolship

Anchorage Brewing in Alaska’s most populous city has been known for its sour and mixed-fermentation beers since opening in 2010, and will soon be adding a new layer to its sour program: a 14 bbl coolship on the rooftop deck of its new expansion. While a new coolship at an American craft brewery is noteworthy on its own, this one is even more unique in being the first all-wood coolship in commercial operation. It was made by Foeder Crafters in St. Louis, Missouri.

Urban Brew Labs Taproom Now Open

You’ve heard of Dad Bod. If you haven’t, it’s worth crawling out of the rock you’ve been living under to grab some. For starters, Dad Bod is back. More importantly, the brewery behind Dad Bod Hazy Lager, Urban Brew Labs, recently opened their first taproom. Since 2018, Urban Brew Labs has been distributing beer in the Chicagoland area. They began as draft-only and have since evolved to offer cans and draft beer to the market. Now, you can enjoy their beers (along with guest taps) at their very own taproom in the Ravenswood neighborhood of Chicago.
